Breakfast ideas

This week I will be posting breakfast ideas for those trying to eat clean, but struggling with a quick, nutritious breakfast.

As we are learning, most breakfast cereals are trash.  Processed, loaded with sugar, we try and stay away from the boxed cold cereal. But one cereal we shouldnt forget it OATMEAL. Its no wonder bodybuilders live in it. It’s packed with fiber, protein and good clean carbs, definitely on my A list of foods!!  Heck I even eat it for lunch sometimes.

A complaint I get often is about taste.  Yes, plain oatmeal can taste rather bland.  This is why we need to dress it up.  Here are two of my favorite oatmeal recipes that I made up trying to dress up Layla’s oatmeal.

Coconut-banana oatmeal:

  • 1/2c dry oatmeal  (I prefer gluten free)
  • 1/3c unsweetened coconut milk (available at Trader’s Joe’s)
  • 1/2 banana

Chop the banana up and mix in a bowl with the coconut milk and oatmeal. Cook microwave on high for about 2 to 3 minutes.  Stir well.  Enjoy.

Strawberry/almond-vanilla protein power oatmeal:

  • 1/2c dry oatmeal
  • 1/3c unsweetened vanilla almond milk
  • 1 scoop vanilla protein powder
  • 1c frozen strawberries

Combine oatmeal, frozen strawberrie and milk in a bowl.  Microwave on high for about 2 to 3 minutes or until strawberries are soft.  Stir in protein powder.  Enjoy!

Be creative.  Oatmeal can taste great if dressed right!!
