High protein pancakes
1c whole wheat flour or ground oats
3/4c cottage cheese
2 scoops whey
1 tbsp maple syrup
1c thawed frozen strawberries(opt)
Mix the egg whites and cottage (and strawberries) in a blender until smooth. Mix with the flour and protein powder, add applesauce and maple syrup. Mix well. Heat oil, cooking spray or butter on pan and drop spoonfuls of batter. Wait until bubbles form and flip until both sides are light brown and the inside is well cooked. Makes 18 small pancakes.
(I typically will eat 4 for breakfast and 1 tbsp of maple syrup, which total out to 220 calories, 11g protein, 43g carbs, 1.5g fat. You can make a bunch in advance and just heat them in the morning for a quick breakfast)
