This one is courtesy of my friend Ashley H. (thanks girl!), who is a granola bar lover. As we know, granola bars are loaded with unecessary sugar and processed JUNK. This recipe is from my all time favorite Precision Nutrition Gourmet cookbook! Packed with protein, complex carbs and essential fatty acids, these bars will feed your hungry muscles without packing on the fat. So induldge and enjoy.
- 2 cups rolled oats
- 1/2c crushed walnuts
- 1/2c unpacked raisins
- 4 scoops vanilla whey protein powder
- 4 tbsp whole flaxseeds
- 2 tbsp honey
- 1/4c salt (opt)
- 1/4 tsp vanilla extract
- 1/2c sugar free maple syrup. (if you dont care for artificial sweetners like myself, I would opt for the Grade B natural maple syrup. No Aunt Gemima please!)
In a large bowl, combine the oats, walnuts, flax seeds, raisins and whey. Add the honey, syrup, vanilla, and salt. Stir until everything is throughly mixed. At first it will see too dry, but contine stirring and it will eventually blend.
Coat a clean, dry 8X8 baking dish with olive oil spray. Press the mixture into the bottom of the dish. The mixture should extend to all corners evenly, and it should be about 1 inch thick. You can also use a smaller baking dish for thicker, chewy bars.
Bake at 350 degrees for 10 minutes. Makes 8 bars.

241 calories, 18g protein, 28g carbs, 5g fiber, 10g sugar, 7g fat
Note: I also added 1 tbsp of coconut oil to my batch, and used the Grade B maple syrup since I am trying to avoid artifical sweetners. Keep in mind that will bump up the calories, fat and carbs up a bit.
