lean ground turkey

You cant go wrong with lean ground turkey.  I made this tonight and wanted to share a quick fix me up for dinner.


  • 1 lbs of extra lean 98% or lean 90% ground turkey
  • 1 medium onion
  • 1/2 green pepper
  • spices of choice.  Fresh parsley goes well here

Chop the vegetables in a food processor.  Mix the meat mixture with the chopped vegetables in a large bowl. Add spices and mix well with your hands. I sometimes will add a tbsp of tomato paste to give it color.  If this is a Post Workout meal (to be discussed later), then 1/2c of oatbran or gluten free bread crumbs cant hurt.

Spray a medium pan with cooking spray and flatten the meat mixture in the pan.  Cover and allow the steam to build up on medium heat.  Once the meat is mostly cooked, cut into 4 slices and flip.  Cook for another 10 to 15 minutes on low/medium heat. 

This dish is great with a side of steamed veggies, or sauteed cabbage.  If its a post workout meal, some brown rice will pair nicely.
