This is the project in my kitchen this morning while the baby sleeps. There are ways to modify this recipe depending on what youre aiming for in terms of macronutrients. Today’s recipe is a lower carb version, but you can always change that by swapping out protein for carbs. I will try that at another time.
The brand of protein powder is key for this recipe, as it is what gives the most flavor. Do not use GNC brand, for some reason it has an off flavor and a poor texture. I use the brand I bought at the gym which was at one time called American Whey. Jarrow whey protein powder is good too and does not contain any artificial sweeteners, as it uses fructose.
- 60g dry ground oatmeal
- 2 eggs
- 1/2c liquid eggwhites (or milk)
- 6 TBSP unsweetened cocoa powder
- 1 tsp baking powder
- 1 TBSP vanilla extract
- 6 scoops good-tasting protein powder
- 1/3c stevia (opt)
- 3/4c nonfat greek yogurt
- 1/2c applesauce
- 15g semisweet chocolate chips (opt)
Mix dry ingredients first and then add wet ones. Add batter to either a greased 9X9 pan or a 12 ct muffin pan (recommend using paper muffin liners)
Bake at 350 degrees for 30 to 35 minutes.
If cut into 8 large brownies, its about :
165 calories, 3g fat, 15g carbs, 21g protein or 4 weight watchers points
If made into 12 muffins, each is about :
110 calories, 2g fat, 10g carbs and 14g protein or 3 weight watchers points
