Chocolate protein muffins


  •  1c oat flour (I make my own using a high speed blender)
  • 6 scoops chocolate whey protein
  •  1.5 squares unsweetened baking dark chocolate (melted)
  •  1/2c unsweetened applesauce
  •    1/2c greek yogurt (2%)
  •  1 egg
  •  1 tbsp coconut oil
  •  1/3c coconut or almond milk (vanilla or chocolate)
  •  1 or 2tbsp semisweet baking chocolate chips
  •  1 tsp baking soda
  •  1 tsp baking powder

First thing, melt the baking chocolate in either a double burner or microwave. Add the applesauce. Mix all dry ingredients in a mixing bowl and all the wet ingredients in a small bowl.  Mix the dry and wet ingredients. You can use an electric mixer for 2 minutes if it seems grainy.  Pour in paper or foil muffin tins filling 1/3 to the top.  Bake at 350 degrees for 20 to 30 minutes or until a toothpick comes out clean from the center. 

Each muffin 150 cals, 5g fat, 14g carbs, 16g protein
