Turnip Hash Browns

Ingredients (from Primal Blueprint Quick Meals):

  • 2 or  3 small white turnips, peeled and shredded
  • 3 tbsp butter
  • 2 or 4 scallions, chopped thinly

Heat the butter, add the turnips and scallions and smother in the butter.  Cook on medium heat for about 10 to 15 minutes or until brown.

Mandy’s Modifications:  I decided to try and modify this meal to make it higher in protein and lower in fat.

I reduced the butter from 3 tbsp to 1.5 tbsp and I added a little chicken broth and mixed in a few eggwhites to increase the protein content of this dish.

Rating : I give this dish a rating of 4 on a scale of 1 to 5.  I like that its quick and easy to prepare.  The flavor of turnips takes some getting used to, as does your digestive system because it can make you quite gassey! Overall not bad!  Even the baby ate some of it!
