gluten free high protein chocolate brownies

Ingredients:

  • 3 scoops chocolate whey protein
  • 1/2c ground oat flour (gluten free)
  • 28g coconut flour
  • 14g almond flour
  • 4-6 egg whites
  • 1/2 lowfat cottage cheese
  • 1/2c nonfat greek yogurt
  • 3/4c unsweetened applesauce
  • 6 tbsp organic unsweetened cocoa powder
  • 1/2oz unsweetened dark chocolate (melted)
  • 1/3c all natural peanut butter
  • 2 tsp baking powder
  • 2 tsp baking soda
  • optional you can add some semisweet chocolate chips

Simply mix the wet ingredients in a blender or a bowl until blended well. Mix in the dry ingredients and mix well.  The batter will seem a little thick due to the coconut flour so make sure to blend well.

Grease a square baking pan with cooking spray and pour batter in.  Bake at 350 degrees for 30 minutes!  Cut into 12 brownies. I wrap them individually and store in fridge.    A great breakfast with coffee.

192 calories, 17g carbs, 5g fiber, 18g protein, 8g fat
