Eggs for dinner!


I am a big fan of eggs for dinner!  They are simple to prepare, taste yummy and packed with nutrients, such as omega 3 fats, choline, antioxidants Lutein and zeaxanthin, vitamin A, iron, selenium, to name a few!  Also packed with protein, the cholesterol in eggs are not something to be concerned about (unless you have been told by a doctor to stay on a low cholesterol diet!).  Eat Real Food, and eggs are on the top of my list.

Tonight, I wanted to make a simple dinner for myself.  I had some spaghetti squash, onions, eggs, turkey bacon, and goat cheese.  I sauteed the spaghetti squash with onions, 2 slices or turkey bacon, and later added about 1/2oz of goat cheddar cheese (for flavor).  Once it was nice and crispy, I added a scrambled egg and reduced heat to low and let it cook for 10 minutes before flipping it.  Voila!  My egg omelet dinner, full of protein, good fats, and fiber from the veggies.

Eggs are great, and perfect for a quick and healthy dinner!
