Pesto chicken pizza


  • 6oz boneless chicken breast
  • dash salt
  • dash pepper
  • olive oil cooking spray
  • whole wheat tortilla
  • 3 tbsp pesto
  • 1/4c broccoli florets
  • 1/4c sundried thin tomatoes
  • 1/2c asparagus
  • 1/2c aged white cheddar

Season chicken with salt and pepper and sautee until browned and cooked all the way through.  Set aside. Preheat oven to 400F and lightly caot a baking sheet with spray and palce tortilla shell on the tray.  Spread the pesto base evenly around the shell leaving the outside inch free for the crust. Combine all the other ingredients except for the cheese in a mixing bowl and toss until mixed together.  Spread evenly covering the pesto. Top with cheese and bake until cheese is melted and shell is lightly toasted (1o minute) Serves 2.

Nutriiton per serving: 329 calories, 10g fat, 25g carbs, 33g protein
