- 1 c whole wheat pancake mix or 1/2c oat flour and 1/2c whole wheat pancake mix
- 2 scoops vanilla protein powder
- 3/4c lowfat cottage cheese (can substitute with liquid eggwhites)
- 1 egg
- 3 tbsp flaxseeds or flax meal
- 1/4c water
Place the eggwhites, cottage cheese and flax seeds and water in a blender and process until smooth. Mix the wet ingredients with the pancake mix and protein powder in a large bowl.
Cook the pancakes any size you like them in a skillet coated with butter or olive oil (or cooking spray if cutting fat) over medium heat. After pouring the pancake batter into skillet, they will be ready to flip after bubbles form around the edges (5 minutes).
