What was for breakfast today? I decided to turn my eggs into a complete, balanced meal. Pulled what I had in the fridge. Here were the ingredients.
- 1 egg
- 1/2 onions
- 1/2c red bell pepper
- 1/2c mushrooms
- 3/4c sliced (pre cooked) butternut squash
- 1oz goat cheddar cheese
- 1 tsp butter
Sautee the veggies in butter, and then add the beaten egg and cheese and reduce heat to low and allow it to simmer until eggs are fully cooked, and cheese is melted.
