apple chicken casserole

Ingredients:

  • 1 lb chicken breast, cut into 1 inch cubes
  • 1 apples, peeled, cored, and chopped into 1/2 inch cubes
  • 1 butternut squash, pelled and cubed (4 cups cubed)
  • 2 medium onions, chopped
  • 3 cloves garlic, chopped
  • 1/2c shredded lowfat Havarti cheese
  • 1c chicken stock (from bouillon)
  • 1 tbsp fresh ginger root, chopped
  • 1/2 tsp ground cumin

In a skillet coated with olive oil cooking spray, saute the chicken, garlic and onions for about 5 minuts, until the outside of the chicken is cooked, while remaining raw in the center.  Combine everything in a large bowl, and then transfer to a 9X9 baking dish coated with olive oil cooking spray. Bake at 375 degrees for 40 minutes

Calories: 329, 40g protein, 30g carbs, 5.5g fat
