zucchini banana coconut protein bars

Ingredients:

  • 50g coconut flour
  • 40g ground oatmeal
  • 3-4 scoops vanilla whey protein (good flavor, I mix Jarrow with Visaulus)
  • 1 egg
  • 2 ripe bananas
  • 1/2 unsweetened applesauce
  • 1c pureed cooked zucchini (with or without skin)
  • 1 tsp baking soda
  • 2 tsp baking powder

Steam and puree zucchini.  Mix all wet ingredients together and mix all dry ingredients together.  Mix the wet and dry ingreidents together until blended.  Spray a 9X9 Baking dish with cooking spray.  Pour in mixture in baking dish.  Cook at 350 degrees for 30 minutes.  Let cool.  Cut into 8 squares.

Each square:

120 calories, 12g protein, 2g fat, 12g carbs
