apple pumpkin protein bread

Ingredients:

  • 1 apple, peeled, cored and shredded
  • 1/2c oat flour
  • 1c (55g) coconut flour
  • 3 scoops whey protein (about 1c)
  • 1/2c pumpkin puree
  • 3/4c coconut milk
  • 1 egg
  • 1/2c applesauce (unsweetened)
  • 26g flaxseed meal
  • 1 tbsp coconut oil
  • 1 tsp baking powder
  • 2 tsp baking soda

Preheat oven to 350 degrees. Mix all the wet ingrendeints together (pumpkin pree, egg, coconut milk, applesauce and oil).  In a separate bowl mix all the dry ingredients together.  Then blend the wet and dry ingrendeints together and mix well (hand or electric mixer is best).  Grease a 9X5″ bread pan and pour the mixture in.  Bake at 350 degrees for about 1 to 1.5 hr or until a toothpick comes out of the center clean.  Slice into 8 pieces.

140 calories, 5g fat, 17g carbs, 9g carbs
