Baked garlic zucchini


Baked garlic zucchini (a quick side when in a rush)

  • 3 to 4 zucchini
  • Garlic powder or crushed garlic
  • 1/2tbsp olive or grapeseed oil
  • Italian seasoning
  • sliced onions (optional) for flavor

Cut the zucchini i 2 inch lengthwise pieces.  IN a mixing bowl, toss it with the oil, garlic, and seasoning. Spread on a pan, and spray with a touch of cooking spray. Cook at 375 degrees for 20 minutes.  IF you like it crispier, cook it longer.

I will stick these in oven, and then let it bake while I Feed my hungry children!
