strawberry oat ‘n’ flax muffins

Ingredients:

  • 42g coconut flour
  • 1c oat flour
  • 1c pureed strawberries
  • 1tsp vanilla extract
  • 1 egg
  • 1 scoop whey protein
  • 1/2c nonfat greek yogurt
  • 32g flax meal
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp strawberry extract or flavor (opt)

This one is super easy.  Mix all dry ingredients first. Then add in wet ingredients. Mix well with electric mixer.  Cook at 350 degrees preheated oven for 30 minutes.  Check with toothpick, then sit out and let it cool!
ENJOY THIS ONE, we love it

Each muffin:

90 calories, 2g fat, 15g carbs, 3g fiber, 5g protein
