Pumpkin apple protein muffins


Pumpkin apple protein muffins



  • 3/4c oat flour
  • 1.25 100% pure pumpkin puree (Libby’s)
  • 2 eggs
  • 1/2 tbsp apple pie spice (or pumpkin pie spice)
  • 1/2c nonfat greek yogurt
  • 2 tsp vanilla extract
  • 1 tsp baking powder
  • 1/3c white chocolate chips
  • 2 tsp coconut or grapeseed oil
  • 1c lightly packed vanilla whey protein powder
  • 28g flaxseed meal
  • 3/4c chopped apples (optional)

Directions:  Mix all wet ingredients and dry ingredients separately.  Mix together, preferably with an electric or hand mixer.  Bake at 350 degrees for 30 minutes or until a toothpick comes out clean from center of muffin
Pour in muffin tin with or without muffin backing, spray with cooking spray

Serves 12

Each muffin approximately:

120 calories, 15g carbs, 3g fiber, 4g fat, 10g protein

2 hormonal carbs per muffin
